Brown Butter Chocolate Chunk Cookies

Nutty brown butter paired with melty chocolate is all you need in a cookie! Want to make it perfectly round? Use a small bowl/cookie cutter and swirl around the cookies right out of the oven.

Ingredients:

245g all purpose flour

1 tsp salt

1 cup unsalted butter

1 tsp instant coffee powder

3/4 cup brown sugar

1/3 cup turbinado sugar (you will get some crunch in the cookie or if you prefer, granulated sugar works)

1 tsp baking soda

1/2 tsp apple cider vinegar

1 1/2 tsp vanilla bean paste

2 eggs

150g chopped chocolate


Steps:

1. In a saucepan, melt the butter and cook it down until you see brown bits at the bottom of the pan. Make sure to keep stirring throughout the process, may take about 6-8 mins to see the brown bits. Pour the brown butter into a glass jar and let it cool to room temp.

2. In a mixing bowl, add in the brown butter, sugars, coffee powder, vanilla and beat well. Add in eggs, vinegar and mix until well combined.

3. Add in flour, baking soda, salt and mix until almost combine. Don’t overmix it.

4. Using a spatula, fold in the chopped chocolate.

5. In a baking sheet lined with parchment paper, use an ice cream scoop to scoop out the cookie dough. Let the cookie dough chill for 3-4 hours.

6. Preheat oven to 350F. Bake cookies straight from the fridge for about 11-13 mins.

7. Remove from the oven and immediately use a small round bowl or cookie cutter to circle around to get the perfect round cookie.

8. Enjoy the warm cookie with a glass of milk!
