Small Batch Lavender Latte Cupcakes

Turning my favorite lavender latte drink into this small batch lavender latte cupcakes was such a fun experiment! Even if you don’t like lavender, this recipe is very versatile that you can omit the lavender extract and swap it with vanilla instead and you can have a coffee vanilla cupcake.


Ingredients:

110g all purpose flour

1 tsp baking powder

1/4 cup sugar

1/4 cup salted butter, room temp

1/4 cup strong brewed coffee

1 egg

1/4 cup buttermilk

Frosting

1/2 cup unsalted butter, room temp

1 1/2 cup powdered sugar, sifted

1/2 tsp lavender extract

1 tbsp milk


Steps:

1. Preheat the oven to 350F. Line the muffin tin with 6 cupcake liners.

2. In a bowl, sift through flour and baking powder.

3. In a mixing bowl with paddle attachment, cream butter and sugar until light and airy. Add in eggs and mix well. Then add in coffee and mix well.

4. At the lowest speed, slowly stir in half of the flour mixture, then buttermilk and then remaining flour mixture until well incorporated.

5. Scoop the batter into the muffin tin until about 3/4 filled and bake for about 15 mins or until a toothpick inserted comes out clean.

6. Remove from the oven and let them cool completely before piping.

7. To make the frosting, with a paddle attachment, beat butter until light and airy. Add in powdered sugar and beat until fluffy. Add in extract, milk and mix well.

8. Add frosting into a piping bag and pipe onto the cupcakes.

9. Decorate as you like and serve!
