One Bowl Banana Nut Miso Muffin

Banana nut muffin with crunchy oat streusel toppings and a secret ingredient to elevate the flavor - MISO! These muffins are super easy to make and only require a bowl and a fork to mix everything, so less dishes to wash too.

Ingredients:

190g all purpose flour

100g brown sugar

1 tsp baking powder

1/2 tsp baking soda

85g avocado oil/any neutral oil

2 tbsp milk

1 large egg, room temperature

1 1/4 tbsp miso paste

1/2 cup chopped walnuts

1 tsp vanilla bean paste

1 1/2 cup mashed banana

Oat Streusel Topping:

1/3 cup rolled oats

1/3 cup almond flour

1 Tbsp honey

1 Tbsp avocado oil


Steps:

1. Preheat the oven to 425F. Line muffin pan with baking cups. Makes 12 regular muffins.

2. In a bowl, mix in all oat streusel ingredients and set aside.

3. In a separate bowl, whisk together mashed banana, oil, egg, brown sugar, vanilla bean paste, milk, miso paste and mix until well combined. Add in flour, baking powder, baking soda and mix until no streaks of flour can be seen. Fold in the chopped walnuts.

4. Use an ice cream scoop, fill the baking cups with batter until the cups are close to being full. Sprinkle oat streusel on top.

5. To get the perfect muffin dome, bake for 5 mins at a 425F. Lower the heat to 350F and bake for another 18-20 minutes or until top looks golden brown. Cool for about 10mins. Serve and enjoy!
