Banana Oat Coffee Cake Muffin

Ingredients: Muffin
1 cup flour
½ tbsp baking powder
¼ tsp salt
1 egg
¼ cup greek yogurt
¼ neutral oil
⅓ cup granulated sugar
⅛ cup strong brewed espresso
1 tsp vanilla bean paste
1 banana, sliced
Cinnamon swirl
¼ cup turbinado sugar
1 tsp cinnamon powder
¼ tsp salt
Oat streusel
⅓ cup rolled oats
⅓ cup almond flour
1 tbsp maple syrup
1 tbsp neutral oil
Steps:
1. Preheat the oven to 425F. Line muffin pan with 6 muffin liners.
2. In a bowl, mix the cinnamon swirl mixture and set aside. In another bowl, mix the oat streusel mixture and set aside.
3. In another bowl, whisk together flour, baking powder and salt. In a large mixing bowl, whisk together oil, sugar, egg, greek yogurt and espresso until well combined. Fold in the flour mixture until no streaks of flour.
4. Spoon in 2 tbsp of batter into each muffin liner. Sprinkle the cinnamon swirl and add a slice of banana. Top it with the remaining batter and sprinkle the oat streusel on top.
5. Bake at 425F for 7 minutes. Lower the temperature to 375F and bake for another 15 minutes. Remove from oven and let them cool for about 10 minutes. Enjoy it with a cup of homemade coffee!
