Buttery Buttermilk Biscuits

Whether you enjoy biscuits with jam and butter like me or with sausage and gravy, these biscuits are perfect for them! They are buttery, flaky and slightly salty from using very cold salted butter.

Makes 8 biscuits

Ingredients:

½ cup of cold premium salted butter, diced

2 ¾ cup all purpose flour

1 tsp baking powder

½ tsp baking soda

1 cup of cold milk 

1 tbsp lemon juice/apple cider vinegar

1 egg 

½ tsp of vanilla bean paste


Steps:

  1. Preheat the oven to 350F. Place the parchment paper over a large baking sheet.

  2. In a measuring cup, add in milk and lemon juice. Let it stand for about 10mins. 

  3. In a mixing bowl with a paddle attachment, add in flour, baking powder, baking soda and diced cold butter. At the lowest speed, mix it until the butter starts to crumble up. 

  4. In a separate bowl, whisk in egg, vanilla bean paste and milk-lemon juice mixture until well combined. 

  5. Gradually add the egg mixture into the flour butter mixture and mix until very roughly combined. Don’t overmix this step. 

  6. Pour the mixture over a floured surface and fold the dough a few times to create the layers. Flatten the dough to be about 1.5 inch thick. Use a 2 inch round cookie cutter and cut out the biscuit and place it on the baking sheet. Repeat until all dough is used. 

  7. Bake for about 35-40 mins or until the top is golden brown. Remove from the oven and brush some melted butter on top of biscuits immediately. 

  8. Best eaten when they are warm and enjoy it with some jam and butter.
