Strawberry Kefir Mousse Jar
This classy small batch Strawberry Kefir Mousse Jar topped with some roasted strawberries and layered with hazelnut crisps will definitely be a good sweet treat to round out a nice meal! Makes 2 servings
Ingredients:
5 pieces of digestive biscuits
1/3 cup roasted hazelnuts
4g gelatin powder
1.5 tbsp hot water
70g heavy whipping cream
80g strawberry kefir (I used the ones from Lifeway Kefir)
10g granulated sugar
Steps:
1. In a food processor, blend in the digestive biscuits and roasted hazelnuts.
2. In a small bowl, mix in gelatin powder and hot water and let the gelatin bloom for about 5-10mins. Right before using, place the bowl over another bowl of hot water and let it sit until the gelatin turns to a liquid form.
3. In a mixer, whip the cream until it's at medium peak.
4. In a separate bowl, add in strawberry kefir and sugar and whisk well until sugar is dissolved. Add in the gelatin liquid and mix well. Fold in the whipped cream until well combined.
5. In a mini jar/ramekin, layer the hazelnut crips then the strawberry layer and alternate it until it's filled. Chill them in the refrigerator for about 2 hours or until set. Top it with your favorite topping like roasted strawberries or more whipped cream and enjoy!
