Matcha Tiramisu

Matcha Tiramisu! Small batch no bake treat for this summer season and this recipe makes 4 mini jars that you can easily share with others or have it all by yourself.

Make sure to use good quality matcha to bring out the nice intense green color and tea flavor! My personal favorite is the Culinary Grade Matcha Powder from @aiyamatcha.

Ingredients:

160g heavy whipping cream

160g mascarpone cheese

2 tbsp sugar

8 lady fingers

1.5 tbsp matcha + 25g hot water

1 tsp matcha + 10g hot water

Steps:

1. Matcha mixture: In a bowl, sift in 1.5 tbsp matcha powder and add in 25g hot water. Whisk until there's no lumps.

2. Matcha paste: In another bowl, sift in 1 tsp matcha powder, add 10g hot water and mix well.

3. Using a stand mixer with a whisk attachment, whisk the whipping cream and sugar in a chilled bowl until soft peak and set aside.

4. In a bowl, beat the mascarpone cream until creamy and light. Add back in the whipped cream and whisk at low speed until well combined.

5. Remove half of the mixture. With the remaining mixture in the bowl, add in matcha paste and mix well.

6. Break the ladyfingers into pieces and lightly dip into the matcha mixture and fill it in the jar. Add a layer of plain cream mixture then a layer of matcha cream mixture. Repeat this until it's completely filled.

7. Chill the matcha tiramisu for about 4 hours.

8. Dust some matcha powder before serving.
