Peanut Butter Banana Oat Muffin
These peanut butter banana oat muffins are the easiest and delicious muffins that you can make at home - perfect breakfast meal on the go! Creamy peanut butter, naturally sweetened with banana and date syrup, and lots of nutritious fiber from oats.
Ingredients:
1 1/4 cup oat flour
3/4 tbsp baking powder
1/2 tsp salt
2 eggs
2 ripe banana (mashed)
1/2 cup peanut butter
4 tbsp date syrup
splash of vanilla extract
1/2 cup of chocolate chips
Steps:
1. Line muffin tin with baking cups and preheat the oven to 425F.
2. In a bowl, add in mashed banana, peanut butter, date syrup, eggs, vanilla extract and whisk until well combined.
3. Add in flour, baking powder, salt and mix well. Fold in chocolate chips.
4. Fill each muffin cup with the batter until it's almost filled.
5. Bake at 425F for 5 mins (to get the nice dome shape on top of the muffin) and lower the heat to 350F and bake for another 12 mins.
6. Remove from oven, let it cool and ENJOY!
